In 1832, Prince Metternich requested a special dessert for his guests. With the head chef ill, 16-year-old Franz Sacher stepped in. He created a dense chocolate cake, coated thinly with apricot jam and topped with a mirror glaze of chocolate. It remains the definition of Viennese elegance.
