Baklava is a dish of patience. Forty layers of paper-thin filo dough are brushed with clarified butter, layered with pistachios or walnuts, and baked to golden perfection. The hot pastry is then doused in cold syrup (sherbet), creating a hiss of steam and ensuring the pastry remains crisp rather than soggy. It is a legacy of the Ottoman Empire, served to Janissaries and Sultans alike.
